Wholemeal breadcrumbs with Eat me at and mushrooms

- Shiitake 150 g

- Wholemeal flour 170 g
- Olive oil 60 ml
- Salt 1 \ 4 tsp
- Ice water 2-3 tbsp
- Olive oil 1 tsp
- Soy sauce 1 tbsp
- Maple syrup 1 tsp
To prepare the dough you need to mix flour and salt, add oil and knead the dough. Gradually add ice water until the dough gathers into a ball. Wrap in cling film and refrigerate for 20 minutes.
Meanwhile, prepare the filling. Cut the white part of the leek into rings, wipe the shiitake with a damp cloth and cut into slices. Fry onions in oil until soft, add shiitake, salt, pepper and fry until cooked over medium heat. Separately fry the minced meat, breaking the lumps of minced meat with a wooden spatula.
Roll out the finished dough to a thickness of 5 mm on parchment.
For the sauce, whisk the ingredients together.
Transfer the parchment with the dough to a baking sheet. Put minced meat in the middle, mushrooms and onions on it, leaving 1-2 cm of free edge.
Wrap the edges of the dough, sprinkle the filling with sauce and bake at 180 ° C for 20-25 minutes.
