- 3 small zucchini (somewhere 700g)
- 1 small bulb
- 2 cloves garlic
- 3 tablespoons oil
- Salt and pepper to taste
- 30 g of almonds
- 200 g of small cherry tomatoes
- Juice of half a lemon
- Greens to taste (cilantro or basil)

Preparation of zucchini:

Turn on the oven at 200 degrees, convection. Cut each zucchini into halves (shuttles). Spoon the pulp into a bowl, put the shuttles in the oven to bake for 15-20 minutes.
Prepare the filling:

Chop the zucchini pulp with a knife, add a little salt and place in a colander or sieve. After a little good squeeze your hands to get rid of maximum water. Finely chop the onion and garlic, fry them in oil in a pan, add the zucchini pulp, and after a few minutes - mince Eat Me At, mix, salt and pepper to taste. Cook for up to 10 minutes.

Remove the zucchini from the oven, put the minced meat inside and bake for another 15-20 minutes to brown a little.
We prepare salsa:

Cut cherry tomatoes into 4 slices, put in a bowl. Cut the almonds into halves, finely chop the greens. Mix these three ingredients in a bowl, season with lemon juice and 2 tablespoons of oil.
Put stuffed zucchini on a plate, serve, generously drizzled with salsa.
